"Blue Moon Harbor Christmas" in Winter Wishes

 

 

RECIPE

Jillian Summers’s mother makes this family favorite on tree-trimming night.

Cheesy Scalloped Potatoes

Ingredients

  • 4 cups potatoes, thinly sliced (you may peel or leave the peel on, as preferred)
  • 1/2 onion, thinly sliced or chopped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1⁄2 cups milk (or 1 cup milk + 1/2 cup half and half)
  • 1/2 teaspoon salt
  • 1/2 tsp pepper (or substitute a dash of cayenne pepper)
  • 1 cup grated sharp cheddar cheese
  • 1⁄2 cup grated cheese, to sprinkle on top
  • paprika

Directions

Preheat oven to 350°F.

In a sauce pan, melt butter and saute onions in it until soft. Blend in flour, salt, and pepper. Add milk, stirring with a whisk. Cook sauce on low to medium heat, whisking occasionally, until smooth and beginning to thicken. Turn off heat and stir in 1 cup grated cheddar until melted and smooth. Remove from heat.

Place a half of the sliced potatoes in a lightly greased one quart casserole dish. Pour half the cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce.

Cover with foil and bake for 35 minutes. Remove foil and sprinkle the remaining 1/2 cup cheese on top, and sprinkle lightly with paprika. Bake another 30 minutes (approx) until potatoes are soft, cheese is melted and edges begin to lightly brown. Let stand a few minutes before serving to allow sauce to thicken.
